Aydın Yamalak Sarısı Zeytini is cultivated exclusively in the Aydın province. It originates from Yamalak, a town in the Kuyucak district of Aydın, and is a commercial olive variety widely grown in the region. The reason for its name "Yamalak Sarısı" is due to a local teacher who discovered and began cultivating this variety.
Aydın Yamalak Sarısı Zeytini is the earliest maturing olive in the Aydın region. The unique climate, rainfall, humidity, and altitude characteristics of the area contribute to the earlier ripening of the Yamalak Sarısı Zeytini compared to other varieties. As this variety is consumed as a green table olive, its green ripening period falls between the last week of September and the first week of October. For other green table olive varieties, this period occurs in the second week of October. Therefore, the advantage of early harvesting allows the Aydın Yamalak Sarısı Zeytini to influence market conditions.
