AYDIN ENGİNARI

The application for the geographical indication “Aydın Enginarı", filed under application number C2023/000202 on August 8, 2023, was registered on January 10, 2025, with registration number 1688.

Aydın Enginarı is obtained by early harvesting of perennial plants of the Cynara scolymus L. cv. species, which mature in the spring months under warm climate conditions. The head of the Aydın Enginarı is thin, the flower receptacles are fleshy, and the top part is conical and shaped like a water glass, with a diameter ranging from 7.0 to 10.0 cm. The plant’s leaves are flat and thin, and its stem is slender and delicate. The first leaves that emerge are flat, about the size of a hand, and resemble lettuce in shape. While the backs of the leaves are hairy, the front sides are hairless. The plants are quite robust, with stems reaching a height of 1.20 to 1.30 meters. The flowers of the Aydın Enginarı are lilac in color, but if left in the field for a longer period, the color darkens and turns purple.
