Considered a symbol of fertility in ancient Greek and Egyptian civilizations, the fig's culture in Anatolia is as old as human civilization itself, as noted by Herodotus in his writings from 484 BC. The fig, present in all civilizations of Anatolia and the Aegean, has been a symbol of abundance and prosperity for generations. Dried figs, a nutrient-rich product, contain easily digestible fructose and glucose. As a source of pectin, figs provide various health benefits, such as helping to remove toxic substances from the intestines, reducing blood cholesterol levels, and preventing rapid increases in blood sugar in diabetic patients. Its high fiber content makes dried figs a soothing remedy for throat and intestinal ailments, and the fact that they contain more calcium than milk makes them a recommended food for bone growth disorders. Both dried and fresh figs are not only important in terms of human nutrition but also hold significant socio-economic value due to their contribution to the economic development of mountainous areas, their benefits for a sustainable environment, and the employment opportunities they create.

Chestnut

According to historical sources, chestnuts were cultivated in Anatolia and then spread to Europe. The scientific name for chestnut is "castanea," and the chestnut tree belongs to the beech family, growing in temperate regions of the Northern Hemisphere. With its upright trunk, reddish-brown bark, and sturdy leaves, Aydın is the most prominent region for chestnut cultivation in our country. Chestnuts have played an important role in human nutrition since ancient times due to their many nutritional components. In local language, they are referred to as "bread of the mountains."

Chestnuts are organic agricultural products that grow under natural conditions without the use of agricultural chemicals or synthetic fertilizers. They contain good-quality digestible fibrous substances, primarily starch and various sugars, protein, low levels of fat, minerals, and vitamins B1, B2, and C. The flowers of the chestnut tree are an important source of honey, which is beneficial for asthma conditions.

Pine Nuts

Pine Nuts

The limited areas suitable for the cultivation of pine nuts around the world and the insufficient production levels increase the value of this product. Additionally, the differing soil and climate conditions in the regions where they grow lead to variations in flavor and aroma. The pine tree forms large communities and pure stands in areas influenced by the Mediterranean climate, such as Spain, Portugal, Italy, the Adriatic coast, the Peloponnese peninsula, the island of Crete, and the coasts of Anatolia. Communities can also be found in the humid and temperate regions of West Africa, South America, and around Crimea.

In our country, the optimum growing environments for the pine nut tree include Bergama-Kozak, Çine-Karpuzlu, Aydın-Koçarlı, Söke-Bağarası, Milas-Turba, Muğla-Kantarcı-Madran, Antalya-Serik-Manavgat, Maraş-Önsen, İzmir-Seydiköy, and the Artvin-Çoruh Valley. Among these areas, Aydın-Koçarlı and İzmir-Bergama-Kozak in the Aegean Region hold significant importance. Economically, the pine nut tree is utilized for its seeds, wood, and resin. The pine nut tree produces fruit every year and prefers sunny locations and stable climates. They are propagated by seeds. The cones mature by January, and the collected cones are continuously exposed to the sun until June to ensure they open. Once the cones are fully opened, they are struck with mallets to extract the shelled pine nuts (künar) inside.
